ANGEL HAIR PASTA WITH ONION GARLIC AND TOMATO SAUCE.
- 4 large tomatoes
- 1 large onion
- 6 garlic cloves
- juice from 1 lemon
- 1 teaspoon kosher salt
- 1/2 teaspoon granulated sugar
- freshly ground pepper
- 1 packet angel hair pasta
- 1/2 cup fresh basil, chopped
- freshly-grated parmigiano reggiano
- extra virgin olive oil, for drizzling
Coarsely chop the tomatoes (if they are cherry tomatoes, chop them in quarters or halves).
Mash or finely chop the garlic cloves.
Finely dice the onion.
In a saucepan on medium heat, combine chopped tomatoes, garlic, lemon juice, salt, sugar, and pepper. Cook until onion is translucent.
Boil the pasta according to the package directions. Once pasta is cooked toss into the tomato mixture and add basil at the last minute.
Serve with grated parmesan and a drizzle of olive oil.
