I could live on lamb. I’m not a huge red meat eater but I LOOOOVE lamb.
My go to meal on any given day of the week if I’m in need of some meat is plain and simple grilled lamb cutlets (or chops). Always has been a favourite in my family. You can serve it with any kind of salad, leafy green, tomato, bean salad, greek salad, tossed salad, you name it! Or you could have them with home made chips, baked potato or mash, you could even have seasonal vegetables or even couscous etc. The possibilities are endless!
The way I do my lamb cutlet vary but I always cook them under the grill in my oven, so I can mop up the excess fat. This particular lamb cutlet recipe you will need:
INGREDIENTS: (serves 2)
6 Lamb Cutlets
Juice of 1 Lemon
1 clove of Garlic (crushed)
1/4 teaspoon of Oregano
Salt and Pepper to taste
Simply marinate the lamb cutlets in the marinade of lemon juice, crushed garlic, oregano and salt and pepper in the fridge for around 3 hours.
Then place cutlets on a sheet of foil or tin baking tray and place underneath grill turning until cooked to your liking. (Mop up the excess fat from the cutlets with a paper towel as you are cooking).
Once cooked, serve immediately with your chosen side dish. If you wish, you can serve with a slice of lemon and some tzatziki (see previous recipes). So yummy!
