OVEN ROASTED POTATOES
4 Potatoes sliced into wedges
4 Tablespoons of Olive Oil
The juice of half a lemon
4 Cloves of Garlic, minced
1/2 Teaspoon of dried Thyme
1/2 a cup of Chicken Stock
Salt & Pepper to taste
Preheat your oven to 180 degrees.
Peel and chop your potatoes into wedges. In a large bowl mix all the other ingredients of olive oil, lemon, garlic, thyme, chicken stock and salt and pepper. Put the chopped potatoes into the mixture and let marinate for at least half an hour.
Place marinated potatoes onto a baking tray lined with baking paper.
Put in the oven and cook for 40 minutes to an hour, occasionally drizzle with remaining marinade. Serve immediately once cooked to golden brown!
