PASTA WITH BACON, LEMON, CREAM, PEAS & A TOUCH OF MINT
I have only mad ethos recipes once and it was a couple of years ago. Just found it in my recipes book and its on my to do list again. It was delicious!!! Give it a try.
Cook the pasta in a saucepan of lightly salted boiling water following packet directions or until to your liking. Add the peas in the last 2 minutes of cooking. Drain, reserving about 1/4 cup of cooking liquid. Return the pasta to the pan.
Meanwhile, heat a non-stick frying pan over high heat. Cook the bacon, stirring occasionally, for 5 minutes or until crisp. Transfer to a plate lined with paper towel.
Lower the heat to medium. Add the onion and cook, stirring occasionally, for 5 minutes or until soft. Add the garlic and cook, stirring for 1 minute. Add the bacon, cream, lemon rind and reserved cooking liquid, and stir to combine. Simmer for 2 minutes.
Add the bacon mixture and mint to the pasta and stir to combine. Season with salt and pepper to serve.
