HEALTHY GREEN FRITTERS

Here is an awesome way to eat your greens and also get your kids eating their share of super foods! Totally versatile meal or snack for any time of the day, be it breakfast, lunch or dinner!

 

INGREDIENTS:

2 Spring Onions chopped

A pinch of Thyme & Oregano (I use dry)

2 cloves Garlic minced

1 handful baby kale or spinach, roughly chopped

1/2 small head broccoli, diced up

1 zucchini grated

1/2 small head cauliflower, diced up

2 handfuls corn kernels

1/2 block feta cheese, crumbled

3 eggs

2-3 heaped Tbsp gluten free flour or normal flour if you don’t have a problem

Salt & Pepper

2-3 Tbsp Extra Virgin Olive Oil for frying

 

INSTRUCTIONS:

Chop onions & chop or grate greens, place them in a large bowl. Mince the garlic and add to onion and green mixture. Add your herbs. (I like the thyme and oregano but you can use whatever you like!)

Beat your eggs in a separate bowl and add to the greens and garlic mix, next add your corn kernels and feta. Add one tbps at a time of flour to a thickish consistency. Season really well with salt and pepper.

Gently heat oil in a healthy non stick pan.

Add tablespoons of the mixture, flattening down with the spoon, and cook gently until golden each side.

Drain on paper towel.

Serve with a yummy sauce such as home made tzatziki. Yummo!!!
