A stock standard classic salad but also one that has massive health benefits.
I have previously written about the huge health benefits of Apple Cider Vinegar, and this recipe incorporates the perfect use of that amazing ingredient with beautiful raw, crisp ingredients. This salad is fantastic and very very healthy so get into it. Please try it out and reap the rewards!
3 medium cucumbers, peeled and sliced 1/4 inch thick
1 medium onion, sliced and separated into rings
3 medium tomatoes, cut into wedges
1/2 cup vinegar
2 teaspoons salt
1 teaspoon fresh coarse ground black pepper
A drizzle of extra virgin olive oil
1 teaspoon chopped fresh mint (optional)
1. Combine all ingredients in a large bowl.
2. Toss well to mix.
3. Refrigerate at least 2 hours before serving.
