I made a little random creation the other night. I was originally just making a vegetable mash meal for my little 14 month old son, but it ended up turning into a side dish for my husbands and my dinner as I couldn’t be bothered cooking anything else.
I was actually really happy with the way it turned out. Simple and easy, and very healthy!
INGREDIENTS:
1 diced Onion
2 cloves of Garlic minced
3 diced Carrots
2 stalks of diced Celery
1 cup of diced Broccoli
1 cup of diced Cauliflower
1 sliced Zucchini
1 cup of Brown Lentils
1 cup of Brown Rice
2 cups of homemade Chicken Stock
2 cups of Water
Coconut oil
Salt & Pepper to taste
INSTRUCTIONS:
So I browned the onion, garlic, carrot and celery in a frypan with some coconut oil. Once all browned I transferred it all to a large stainless steel pot.
To that mix I added one cup of the chicken stock and 1 cups of water and brought it up to the boil and added the Broccoli, Cauliflower, Zucchini, Lentils & Brown Rice. I let this boil for about 3 monies then turned down the heat and let it simmer with the lid on until the rice was cooked through which took around 25 minutes. I removed a cup of the mixture and I added more chicken stock for my son so I could puree it down a little for him as a thick soup type texture. The remaining mixture in the pot I let simmer until it cooked down to a more risotto/pilaf type of texture and consistency. For my husband and myself I added salt and pepper to taste! I served our with grilled pork bits. It was delicious! You should give it a go!
