All busy mums know the age old dilemma of what the bloody hell are you going to have for lunch when you have a baby or toddler that is changing their nap times more often than you’ve had hot dinners. And you are flat out trying to get all the shit done around the house after taking care of you little one or ones, let alone look after yourself. I also run a couple of businesses from home so I have that to concentrate on, but I’m way luckier than the mums who have to head off to work and then come home after a 8-10 hour day and do all this too! So regardless of who is doing what… we are all exhausted and starving most of the time and rarely have time to prepare ourselves a good meal!
So today I brainstormed at last. I was sick of eating the left over crusts from my sons sandwiches that usually end up on the floor for the dog anyway, or corn thins or cruskits with cheese and vegemite! So I got clever (as I said- at last), and made a big pot of rice, quinoa, and vegetables! So now I have some preprepared meals that I have frozen for myself in the deep freezer so that on the days when I really don’t have time for can’t think of what I want, this is my go to without having to eat some very non nutritious heap of crap!
Check out my recipe. It was yummy… I loved it! So did my son actually, and my husband has stolen some for his lunch tomorrow too!
1 Cup of SunRice Naturally Rice & Quinoa
2 cups of home made Chicken stock
1 diced Onion
2 cloves of diced Garlic
1 cup of chopped up Cauliflower
1 cup of diced Carrot
1 cup of diced Celery
1 can of Five Bean Mix
1 cup of frozen Baby Peas
Soy Sauce and Salt and Pepper to taste
I used the absorption method for my rice and quinoa mix. Its explained on the packet. Instead of water I used home made chicken stock though! Yummy!
In the mean time I diced my onion and garlic and sautéed that off until soft, then I chopped my cauliflower, carrot, celery and added that to the onion and garlic and browned it a little bit.
Once the rice and quinoa mix was ready I transferred my vegetable mix into that pot with the grains and mixed well. At this stage I added a bit of hot water out of the jug to create a little extra juice. I then added my cup of baby peas and some soy sauce and salt and pepper to taste. Use as much or as little as you like! Enjoy!!!
This was seriously yummy! So I have a totally healthy meal and one that will keep me full for longer so I have more energy to chase around my little munchkin! xxx
