Want a healthy pasta? Well… I’m a self obsessed pasta lover and could honestly eat it every night of the week. I am trying to ease up on the gluten so this super easy meal was a winner!
INGREDIENTS:
Gluten Free Pasta of your choice (I use Barilla, its lovely)
1 teaspoon of Extra Virgin Olive Oil
1 sliced Brown Onion
4 cloves of diced Garlic
1 chopped Red Capsicum
3 roughly chopped Truss Tomatoes
A handful of chopped Kalamata Olives
1/2 a cup of frozen Peas
Some crumbled Danish Feta
Salt & Pepper to taste
INSTRUCTIONS:
Turn on your fry pan to a nice hot temp and add the olive oil.
Brown your sliced onion until translucent, add the chopped red capsicum and the diced garlic. Saute until soft.
Add truss tomatoes, kalamata loves and frozen peas. Turn the heat down to a low heat.
In the mean time start your water on boil to cook your gluten free pasta. Add the pasta when water is boiling and cook until ready.
Store your pasta sauce gently and add the chunky crumbled feta.
When ready, drain your pasta and mix into the fry pan with your tomato sauce, mix well and serve with extra lashings of parmesan cheese!!!
